Adapted this dish from a recipe seen on "Lidia's Italy."
In a saute pan, brown onion, garlic and pepperoncini in olive oil, add one hot and one mild sausage (out of casing). Once brown , add half a butternut squash and half a red pepper, diced. Then add one can of San Marzano plum tomatoes (break up tomatoes with your hands before adding to pan). Simmer for about a 1/2 hour, add salt and pepper to taste.
Cook broken pieces of lasagna egg noodles (or any other style of pasta) in a large pot of salted water and oil. Once, al dente, add to sauce. Finish with fresh basil and grated grano padano cheese.
Delicioso !

Maya Angelou
"My life and good fortune carry me around the world. However, when I am on a plane and the pilot announces - "ladies and gentlemen,we have begun our decent into...", my burdens lift,my heart is at ease and a smile finds its way, all the way across my face. I know that soon I will be in a car that will stop on a quiet street in...., and I will step out and be home again."

"Quotation"
"What is a "quotation" ? - a saying or piece of writing that strikes people as so true or memorable that they quote it in speech or writing. "
An excerpt from : The Oxford Dictionary of Quotations
As part of my Blog, I intend to quote things I come across that inspire me and hopefully others as they read on.
